Salt for all seasons

Potato Salad

  • 1 lb. cubed potatoes
  • 2 bay leaves
  • 1 sm. onion diced
  • 1/2 tsp Salt for all seasons
  • 1/4 tsp thyme
  • 1 tsp basil
  • 1 c mayonnaise

Boil the potatoes with the bay leaf until just soft. Cool in a large bowl of cold water. Drain. Put cooled potatoes into a large bowl. Add onion and spices and mix well. Mash the potatoes slightly. Add mayonnaise. Taste and adjust seasoning. Chill before serving.
